This one's for all the wine geeks out there. This Marlborough Sauvy is actually a Sur Lie (French for 'on the lees'). If you know what lees ageing is, then ya know. But if you don't, Sur lie is the process of allowing a finished wine to continue to sit on the lees during fermentation in order to extract all those yummy complex flavours. So if you wanna geek it up, that's fine. We love our Landmark Sauvy 'cause it tastes so damn bloody awesome.

Winemaking

We love Sur Lie (French for "on the lees"), as it extracts flavour and enriches the palate. Lees ageing (6 months) prior to bottling has developed mid-palate weight adding to the intense fruit characters as well as greater depth and complexity. The fruit is sourced exclusively from our Fareham Lane vineyard, hand harvested and fermented at cool temperatures in stainless settle tanks after gentle pressing. We have used the best strains of yeast most suited to the distinctive aromatics of Marlborough Sauvignon Blanc.
